  • Fresh coriander leaves – ½ cup (chopped)

  • Roasted white cumin – 1 tablespoon

  • Roasted chickpeas – 2 tablespoons

  • Red chili powder – 1 teaspoon

  • Fresh bread crumbs – 4 tablespoons

  • Garam masala powder – 1 teaspoon

  • Ginger-garlic paste – 1 tablespoon

  • Salt – to taste

  • Oil – for frying

Ingredients for Curry (Salan-سالن)

  • Onions – 2 (finely chopped)

  • Tomatoes – 5 (chopped)

  • Roasted white cumin – 1 teaspoon

  • Ginger-garlic paste – 1 teaspoon

  • Red chili powder – ½ teaspoon

  • Turmeric powder – ½ teaspoon

  • Garam masala powder – ½ teaspoon

  • Green chilies – 4 (finely chopped)

  • Salt – to taste

  • Oil – as required

Step-by-Step Cooking Method

1. Prepare the Kababs

  • Add all kabab ingredients into a chopper and grind until smooth.

  • Shape into oval kababs and place in the freezer for a while to set.

2. Prepare the Curry Base

  • Heat oil in a wok (karahi).

  • Add onions, ginger, and garlic, and sauté until golden brown.

  • Mix in red chili powder, turmeric, cumin, garam masala, chopped tomatoes, and salt.
